How do you cook chicory?
There's some in my box delivery this week and I've never cooked it before - let alone eaten it - so help needed please!
Ooooh, Nigel Slater's recipe:
Cut in half lengthwise
Fry gently in butter with the lid on til soft enough and gooey on the cut side
Raise heat, lid off, to evaporate any juices
Add salt and pepper
Eat ;D
If you put bits of chicken in the pan, you have chicken with chicory
Or put some home made stock in if you have some (just a bit) or meat juices
Drooling already .... :P
Try it in a salad - I love it with orange segments, watercress and walnuts in some french dressing.

Simmer the heads in water for about 12 - 15 mins. Meanwhile make a cheese sauce. Drain chicory and press dry. Wrap in slice of ham or parma ham if preferred. Lay in buttered ovenprood dish. Cover with cheese sauce and a few breadcrums mixed with grated parmesan. Brown in a hot oven for ten mins or until golden. Mop up with crusty bread.

They are making my tummy rumble, apart from the meat stuff (I should've said I'm a veggie, but I can easily leave that out). Didn't realised you can eat it raw too.

Tis fab raw, peppery and crunchy! I grew my own a couple of years back, and it was just wonderful! And I vouch for cooking it in butter, or having it with a rich cheesy sauce. They also make great boats for dipping or filling with something yumsky!
