Found this simple recipe, by Annie Bell, using onions in last Sunday's 'Mail on Sunday' magazine :
GRATIN OF ONIONS WITH GOATS CHEESE AND THYME
Serves 4
Method :
Preheat oven to 200C/180C/gas mark 6.
Peel 4 onions and cut into 8 wedges and lay them in a baking dish pointed side up.
Drizzle over 3tbsp of oil.
Roast for 40 mins, baste 1/2 way through.
Toss 50g of white breadcrumbs with 2tbsp of oil.
De-rind 150g of goat's cheese and dice roughly.
Scatter the cheese, breadcrumbs and 1 tbsp of thyme leaves over the onions.
Drizzle over a little more oil.
Bake for a further 20 minutes.
Serve hot or cold.
Sounds delicious.

I am not a fan of goats cheese, but can see this would work equally well with a white crumbly cheese, eg cheshire, caerphilly, or lancashire. I may try this when I get a chance in the kitchen again ...
I like feta, so I may try it with that, rather than the goat's cheese.
