Yeah, cos I soooo often have that left over, but I did! Shock horror. Mum gave me some, and I had bought some, and as I am the only consumer I wondered what to do...so this is what I did....
Cook up a pan full of pasta shells - ideal as they hold the sauce.
Once cooked to your taste, drain, chuck back in the hot pan then season well. Add a lump of cream cheese - I had boursin left.
Stir well until melted, off the heat, then add the cut up smoked salmon.
Then drizzle in a glug of cream - I had about a tablespoon of double left. Stir gently but well until all combined.
Tip into bowl, serve with a hunk of buttered crusty bread.
It was SOOOOOOOOOOOOOOOO tasty!

Emma ,you are so naughty all that cheese AND cream really. OHHHH, wish i could eat it i just make pasta with a white sauce and a touch of Parmesan and throw the salmon in ,still very nice though, i could eat smoked salmon untill i look like it YUMMMMMMMy.
Ah, well the cream was that Elmlea light - I often keep a carton in the back of the fridge because it keeps for an age and you never know when you might want a drop...and my darlink had guzzled most on his hot Chrissy cake!

In our house leftover smoked salmon is a very rara avis ;). Pasta (farfalle or any pasta basically), mascarpone and chopped up smoked salmon when we do have some left over often with a home-grown tomato (scrummily sweet) and basil salad with a balsamic vinegar sauce. Can't wait for spring...
