Post by: katynewbie on December 15, 2005, 15:59:59
Very old chap on our site gave me a load of leeks today. I have loads, but didnt want offend so said ta, politely, and we chatted about stuff for an hour!!

My problem is: What can I do with them? Do they freeze? Any offers other than soup?!!

All ideas gratefully considered!!

Tim loves leeks and will have plenty of suggestions I reckon. Creamed leeks are fab, steamed leeks (thanks Tim), leek au gratin, leek tart, flan, quiche.  Plonk it round the joint at the weekend. Er   I like leek with gammon.  Leek and cabbage is good together.  Good in fry up.  Soup as you mentioned

Yes you can freeze them.  You can google for recipes if you're stuck  :)

Excuse me AikenDrum, that is an interesting culinary term I have not come across before - half a clove of garlic? I measure my garlic at one clove per person, plus one for the pot, so how do I cope with half a clove... polite suggestions only please !!!  ;)

Didn't want to overpower the subtle flavour of the leeks.    {:¬)#

DTF     "Half a clove of garlic" You have to bear in mind that AD is a Scot so is canny with everything.  Well almost .....

I like dried tarragon too  :)

Leeks? Leek & Potato soup? Co-op yesterday & bought Lloyd Grossman's.

DON'T!!  What an abyssmal I'm a TV celebrity thing. Even after lemon juice & loads of pepper - not allowed salt - and bacon sandwiches - it was still unspeakable. How DO they get away with it??

Tim  Why did you have to resort to shop bought leek and potato soup?  Have you no spuds or leeks?  If not could you not forego that soup and choose another for which you have fresh produce?

Ouch!! Sore spot. JUst finished our leeks - one batch got the rot even in a new bed. Yes we have potatoes, but the carrots & celeriac are being very slow. And that's the lot! And, actually, I was testing the soup for veggie Daughter.

Tim you could resort to using just spuds as per M & S very expensive King Edward soup with onion  ;D

My husband bought some very recently and got told off for his trouble.  He's always doing that.  Could have chosen asparagus or broc as I don't have those but spuds and onions piled high  ;D

Just had lovely leeks for tea, cooked with white wine and cream.

Alice  (my daughter) and I went out with a torch to pick the leeks.  Luckily our Lottie is through a gate at the bottom of the garden.

Anyone ever come across leeks with coriander???? Must admit, it's not my most fave leek recipe, but if you've a glut, an edible alternative.......give it a go? It's another Italian one......

Cut the leeks into 4 & put in pan with olive oil, coriander seeds, white wine, water (half-and-half), s&p, bayleaf.......

Bring to the boil & cook without lid, stirring carefully, until leeks are cooked & juice reduced.
S'OK.......

But salmon oven-baked on a bed of leeks........heaven!!

Leeks with coriander is a new one by me, but since we are always fully stocked with 'indian' spices, it is not a problem to try ...

Salmon on the bed of leeks, YES, that does indeed sound like heaven ... I would have to cook a whole salmon of course ...

I've made a couple of dauphinois-type potato bakes (sliced potato with cheese sauce) and have put sweated-down sliced leeks in-between the layers - YUM!
