Title: One pot recipes

Do you have a favourite 'one pot' recipe?  Made this last night and it was very tasty, served with buttery mashed tatties!

3 chunky lamb chops
3 tomatos
1 onion
2 sticks celery
2 big swiss chard, stems and leaves
4 garlic cloves
3 carrot
veggie stock

In the bottom on the pot I put the onion, celery carrot and chard stems, then the chops, then the toms and the leaves from the chard.  Made about a litre of stock and added a good tablespoon of finely chopped rosemary and a teaspoon of cumin and poured it over the veggies and meat.  Season.  This was placed in the oven on about 160 for about 2 hours 30mins.  I didn't eat the meat....I am not terribly keen on lamb chops I have decided, but had the broth and it was very good indeed, and the mashed spuds soaked it up beautifully.    I roughly followed a recipe for mutton tagine...very roughly...

Now tonight we have double wrapped cod loin!  First wrapping is swiss chard, second wrapping, several rashers of good bacon.  YUM!  Again, mash I think, and I have parsnips, so spud and parsnip mash tonight!

EJ    I only ever seem to cook one pot meals as they are my favourites, soups and casseroles etc.  If I have to use a second pan it's not been a good day  ;D
Your lamb recipes sounds lovely and your family are very lucky to have you cooking for them  :)

I like cod or haddock with smoked bacon - goes very well together. 

One pot meal tonight as I spoiled my old man on Sunday and made a roast chicken dinner. Tonight is a prawn, creamed sweetcorn and noodle soup with a dash of hot red pepper sauce and soy.  It's an adapted recipe from Meals in Minutes from Ainsley Harriott.  Delish  :)

EJ my favorite one pot is Deliah's lamb stew, lovely and so easy, and best of all it comes with dumplings ;D
We too do lots of one pots, I make em up as I go along!
Tonight only me and small and we are going to have tacos!

Most of my recipes are two-pot - with pasta.

(it was only pot last time as I didn't bother to par boil the spuds)

I'm sure you could use non-veggie sausages!

Tonight I'm doing a curry with carrots, squash, maybe parsnip, sprouts (maybe they're not such a good idea in curry!) and tofu. It's almost one pot, except the rice!

Must try something like the lamb stew, but without the lamb!

Aqui    Ta for the cassoulet recipe.  I love the stuff. 

Another one pot meal I like lis amb and potato curry, but I was asked the other week to make a veggie curry (which I love) and I used as the main ingredients potato and squash, and a tin of whole tomatoes crushed down to make a sauce.  With the usual curry spices in it the whole thing was delish, and dead cheap as I had grown most of the ingredients

I think I could do a different one pot meal everyday of the week - ot always with celeriac - before Aiken Drum says anything  ;D

I sometimes make Lancashire hotpot but with chicken as I don't eat lamb.  I used to love it but find it too rich now.  Shame.  My other fave was neck of lamb stew with pearl barley & dumplings - we used to call it boney dinner when we were kids.

Do you remember those Marks and Spencer cookery books?  I have one called 'One-Pot Cooking', it is wonderful with three categories of recipes in each section, for either casserole, slow cooker or pressure cooker.  I use it a lot, it is well worth watching out for in the charity shops.

Its always 2 pots in our house, 1 meat dish for them another veggie one for me.

Hubby and sprogs fave is corned beef stew - 1 swede, lots of potatos, 1 onion, lots of carrots plus any other root veggies we have available, boil until tender and add tin of corned beef and thicken.

Another is chicken hot pot, or lasagne, veggie lasagne for me :D

I have my own separate little pot, same as them just without the meat :)

Oh and ofcourse there is curry, suppose thats 3 pots including the rice - the list is endless and I'm starving, we usually eat at 6ish but little sprog is a ballet til 7 and big sprog is at horse riding til 6.30 so don't eat til 7.30 on Tuesdays.  I suppose I ought to go pick them up, distracted again by A4A chatter ;D ;D ;D

ahh, I remember corned beef hash when I was redundant ... followed by bread and butter pudding (with very little butter ..). And I did the cooking.

Biriyani.

In a pan, fry up meat, onions, garlic -any other ingredients you fancy,
once they're browned add the spices/curry powder too, fry for a minute
then the rice, fry for a minute or 2,
Then add, water to cook the rice and turn it down to a simmer -takes ~40 mins.

It tastes better if you use a can of chopped tomato in place of some of the water, you can add in lemon juice or lime pickle some yoghurt &c. too.

For a veg version substitute in chickpeas or lentils or a vegetarian or whatever.

Yum!  Very interesting.  I know traditionally it would be a stew or casserole, so it is interesting to see peoples variations.  I didn't brown the meat first, it went in raw then into the oven....I know you don't get the caramelled flavour or the colouring on the meat, but my darling didn't complain!  ;D

Now, I have a can of coconut milk...thinking of a one pot thai green curry.......

There is no reason why these recipes can't be done in a slow cooker baggy.  I used to use mine several times a week when I worked full time.  Spag boll, curry, hotpot, slowcooked chook.
