Title: recipe for unripe pumpkin?

we had a good crop of squash this year but have a handful of green Turks Turban left which just refused to colour up. They're a good size but I'm at a loss as to what to cook with them. Any ideas anyone ???

To be honest, I would use them as I would any ripe pumpkin.  Some of mine were harvested at the end of the season when still small and immature, but they have tasted fine.  Roast them in chunks in olive oil with garlic and other veggies.  YUM!  ;D

I agree with Emma, they should cook just fine. The one thing that you may notice, is that they may not keep if not fully ripe, so they should perhaps be used first ?
