Title: Wardy - Potato and Celeriac Soup

Picked up some celeriac from farmers market yesterday could you please let me know what else apart from the obvious do you bung in to make this soup :)

onion, garlic, diced celeriac and if there is some fresh leafy foliage chop that and add it, approx 3 little spuds, sprig of fresh thyme from your plot or garden  :), salt and freshly ground black pepper, veg stock.  Single cream to serve or milk if you're on a diet
I sweat the onion in oil or butter then add the finely chopped garlic and fry for a tad longer, then add the chopped celeriac and foliage, spuds, stir and fry a little bit then add the veggie stock.  Not too much as you don't want your finished soup too thin, about a litre should do it.  Add your seasoning and thyme sprig, combine.  Cover and simmer for about half an hour when your spuds and celeriac should be nice and soft.  Remove your thyme sprigs . You can then mash with spud masher or  use a hand blender to liquidise the soup.  Serve with single cream and chunky bread.  As a variation to this you can use chopped bacon and mushrooms in it as well. Delish  :)

Its simmering away as I type and smells absolutely wonderful, we've never had celeriac before, OH came in from golf and thought I was making curried parsnip soup!!

Lunch is almost ready and I've also made a huge bowl of mincemeat, will pop into jars later this afternoon to give as Chrissy gifts :D

I hope you enjoy it then Delilah, for me, celeriac is a vegetable I only discovered through having an allotment, and what a discovery that was !!! My favourite way to eat them is small pieces thrown in with the roast potatoes, so they get slightly caramelised and chewy - scrumptious.

Wardy it was delicious - youngest sprog even had a bowl full and she is the fussy eater in our family - so you should consider that the greatest possible compliment :)

Will try roasted celeriac next time Derek, thanks for the tip!

Delilah, have you tried washing down some of that soup with a glass of rhubarb wine ?  ;D

Neat is brill - but seeing as growing , cooking and eating is what we are all about on A4A have to say "with food" is preferable ;D ;D ;D
