Title: Parsnip and Carrot Straws

Having a rather impressive crop of carrots, and possibly parsnips too, I have been thinking of ways to present these vegetables in delicious ways...

I came up with these straws, easy to make and rather delicious, sprinkled with salt and pepper.

Just cut the roots into pieces about two inches long and one eight of an inch in square section. Plunge into hot oil and fry for several minutes. Remove as soon as they start to darken in colour.

Drain and serve with S & P while still hot.

Can also be served with dips ...

Sounds really yummy Derek.  I have no carrots left but still have a healthy looking bed of parsnips, as long as I don't find out they have forked when I dig them up.  :) busy_lizzie

In my opinion, the parsnips produce superior straws, but since I had so many carrots anyway, I decided to try a few ...

Did a similar thing when I had an allotment with my dad when we had a HUGE crop of turnips.  Didn't know what to do with them, so tried turnip chips and they were darn fine! ;D

I was told by our Secretary when on the allotments on Sunday morning, why the parsnips produced a superior straw ... apparently it is the presence of starch - carrots have negligible starch. The same would apply to turnips I guess. Either way, they were yummy!
