Title: leeks???

I'm stuck for things to do with leeks. I only have four leek receipes: Leek and potato soup, Leek quiche, roast leeks (with over veg) and leeks as a replacement for onions.

What do you do with leeks?

(Reminder - I'm a veggie, so only things that can be adapted please!)

Leeks with butter beans in a creamy, garlic sauce and my fave baked in oven with butter MMmmmm

apples with goat cheese and leek": (4)
1 big apple pp; 2,5 dl white wine; 300 gr leek; 200 gr goat cheese; 30 gr butter; (salt) and peppe, 2 eatsp. creme fraiche.
Oven 200 gr.
Cut leek, simmer for 10 min. in butter
cut goat cheese in slices/ cubes
mx leek and cheese and creme fraiche
ad (salt) and pepper
take centre out apples and take away a bit of ski ( that leaves skin wholewhile baking)
put apples in tin, pour the wine over, fill apples with mix cheese and leeks
Bake in 40 minutes.

Or buy pastry, take those square pieces of dough, fill with pieces of leek ( softened in butter), slices of tomatoes, olive, cheese, (salt) and pepper and put in oven for 15 min.

My mouth is watering now! Lots of good ideas so far.

Lady C - Might have to try the pastry thing later in the week. I have some puff pastry in the freezer doing nothing (I hope it hasn't gone out of date!)

Leek pasty (or tart I suppose) My grandma's recipe.

Line a flan tin with shortcrust pastry.

slice your leeks and soften in butter.

Bung the leeks into the pastry case, season well, then break in eggs, as few or as many as you like really, depends on the size of the flan case.

Cook in a gentle oven until the eggs are just set.

FAB hot or cold!

Grandma used to put a pastry lid on hers.  Also lovely with grated cheese and a good grating of nutmeg.

Chopped small and stir-fried in a little olive oil with ginger, cinnamon, cumin and cayenne.

Simmered in stock on the stove, then in a dish with either stock or white or cheese sauce, sprinkled with breadcrumbs and/or cheese, then in the oven.

lovely in a pasta sauce - just fry onion (only a bit) and leeks with butter until soft, chuck in a glass of white wine and let this almost dissapear - add some cream and grated parmesan, then toss with the pasta - yum (ps, for non veggies, I usually make this with bacon/ham as well, just add this towards the end of the leek frying time)

As the base flavour for risotto.

I reckon they add more to a risotto than onions ever will.

Just sweat them off with finely chopped celery, carrot, and garlic; add the rice, let that cook until it's almost crying for liquid, chuck in a glass of vermouth let the rice absorb that and then be ready with plenty of good stock.

That's just the base of it. I like it with mushrooms added after the vermouth and crumbled in blue cheese (whatever you've got lurking in the back of the fridge really) and finished off with whatever fresh herbs you think will go and plenty of presh parmesan.

I'm soooooooooo envious Wardy leeks are one of my fave veggies and I didn't have enough room at home for any this year but now I've got the lottie I will have no excuses for next year!!!!!

I know it's a long time since this was last visited but I still love Dirtyfingernails' simple but delicious recipe. Great when you can't be bothered cooking!

It wasn't until after I posted yesterday (and was delighted to see EJ's contribution) that I saw that the original thread was from 2005.....

now, if EJ were to come back with her recipes, that would be the ticket! 8)

Its a bit late for courgettes.......BUT leeks and courgette in a white sauce topped with grated cheese and browned off in the oven......Heaven :-*

Boil the leeks till tender, drain. Fry courgettes in olive oil till golden, drain on kitchen roll. Add these to the white sauce and grate your fav cheese on top. Either brown under the grill or oven.

Yummy  ;D

not that late start - ive just binned my courgette plants this weekend lol - damp was getting to them and the were starting to rot a bit

I'm a veggie too and I love them in a recipe of Delias.

You make a shepherds pie filling using quorn or soya mince, onions, toms, carrots, garlic etc ---- then top with mashed potato as usual - but the best bit is that you then press sliced leeek into the mashed potato (so that they don't fall off) and then sprinkle over some grated cheddar - its delicious.

Or alternatively do an oven bake - by lightly cooking the sliced leeks, mixing with double cream and garlic and a tin of butter beans - then top with a mix of grated breadcrumbs and cheese and bake in oven - heavenly with some mangetouts or a green salad.  :)

Me too, have been for 20 years and looove leeks, leek & goats cheese tart pastry made with wholewheat flour with a little cumin added - leek & mushroom pie - leek & spinach bake -  leek,courgette, spinach & silken tofu lasagna - I do a low fat, leek & broccoli pasta with tomato sauce - leek & mushroom sauce using a can of cambells condensed asparagus soup and cook with quorn fillets fab with chips & mushy peas. Yes you could say I love leeks and they hold in the ground all winter waiting for you, could it get any  better
