Apart from salads for colour, & corned beef hash, when do you use them & why??
I use them as rings in things like roasted veg, rattatouilee and veg casseroles where white onions might be a bit harsh. I prefer the sweeter taste of red ones, but don't get them often as they are more expensive (don't have room to grow onions).
I find red onions have a milder taste, so are very edible when raw (I mean like the whole onion ! ) whereas whites can be a bit sharp sometimes. I love them raw with perhaps a bit of french dressing and parsley, or better still, coriander .... mmm

Ohhh red onion and sweet potato soup - just use a basic soup recipe and subsitute the veg for these - really lovely colour and kids adore it.
As an accompaniment to goats cheese, especially as a pizza topping, goats cheese, red onions, garlic, fresh basil, black olives and a drizzle of olive oil.....my absolute favorite pizza!
Did red onion and goats cheese tarts a week ago, and like Aqui and Wardy, roasted veg and ratatouille.
Mine sadly have all been used up now. :'(
I use my red onions mostly in salads, cucumber and red onions salad, spinach and onions, but also a lot when grilling fish, on a pizza, I make red onion soup, sausages in sweet red onion marmelade, focaccia with red onions and rosemary, list is endless, I think ;D

when having entrecote the red onion tast better than the white one,
In the nasi goreng,
Spicey rosemary potatoes with onion in the oven,
Scampi + avocado + ptatoes in oven as starter.. and
bleu cheese recipe:
- 1dl cream whipped. cut onion+fry genltly in oil (2dl arachide oil), add 1 c port, boil 1 minute,
- cut 0,5 cucumber, 0,5teaspoon lemon juice, boil.
- mash onion, cucumber ++ 150 gr blue cheese
- bring 0,5teasp.lemonjuice+1cl port, some water + 1 eatsp.agar agar to boil
-stir till agar is dissolved, add the cream, some chive, add pepper, salt
-put in tin, 4 hours in fridge, cut in slices. :P
I griddle them in chunks with peppers, courgettes, aubergines, fennel etc and stir them through couscous dressed with olive oil, thyme & lemon juice (in summer i do all veggies on bbq)
