Curried Parsnip Soup
Melt 1tbsp veg oil & 1tbsp butter
Add 2 garlic cloves,crushed
2tsp garam masala & 1/2tsp chilli powder
1tbsp plain flour
juice of 1 lemon
Peel & slice about 4-5 parsnips
Add & cook 5 mins
Add 150ml veg stock
S&P to taste
Cook till tender
Puree & serve with crusty bread

Sounds gorgeous. I wish I'd grown parsnips now it's winter and I don't have any :(

That does sound lovely GW, how many does it serve? We have an abundance of parsnips as I set loads expecting problems with germination.....and they all grew!! :)
