Did you know Lottie that oxtail soup is used to rescue terriers stuck down holes. The smell from the delish stuff wafts downwards and the dogs can't resist the urge to find the source of the food and so are encouraged to head towards it. Another completely useless snippet of info there from the Wardy book of useless info. Sorry, I'll get me coat.
I have a box of it in the freezer - & 2 new 'tails awaiting a casserole.
Goes like this...this is for 4 foklks...adjust recipe to suit your number ;D ;D
1/2 a small oxtail
2 tbsp oil
1 small turnip (diced)
3 carrots (sliced)
1 large onion (sliced)
1.1L/2 pints Beef stock
1 teaspoon of dried mixed herbs
salt and pepper
1 soak the oxtail pieces for 45 minutes then discard water
2 heat the oil in a large pan add the vegetables and fry for
5 minutes.Add the stock,oxtail pieces.herbs and plenty salt and
pepper,Bring to the boil then simmer for 3 hours.
3 Cool and remove the pieces of oxtail and cut away the meat.
Return the meat to the soup and refrigerate overnight.
4 To serve- remove any solidified fat from the top of the soup then
bring it slowly to the boil.Simmer for 20 minutes.Serve hot.
Poor kids and OH....they gonna have to eat lotties soup again :'( :'(

Is not in creating stage yet, is in the planning stage.....I don't take soup preparation lightly you know, will need to fill in Health and Safety form first, then there's risk assessment, then....

I went into Waitrose today and was very surprised to see 'prepared' Oxtails laid out on their 'fresh meat' counter - maybe I don't look there very often but.......it brought back to me wonderful memories of the fabulous meals my Mum used to make regularly with oxtail....thanks for the recipe Jaggy - want to give this one a try before too long....just right for the very cold weather they keep talking about!!

Jaggys recipe is much the same as mine, but i do put 2 tablespoons of mixed LENTILS & BARLEY in mine . Also make a nice oxtail stew on a regular basis in the winter, i just tell 1 child and everyone turns up,jungle drums ;D i have to make about 10 dumplings lovvvvvvvvely. ;D ;D
heheh Rosebud. Last time I made it you could smell it from the street and the postman had to ring to ask what I was cooking as it smelt so good! :o

Today's smells were lotty veg soup (as existing entirely on lotty food as skint at the mo) followed by banana loaf. Wondrous smells indeedy :) Makes a change from the usual if you get me drift ;D
Never cooked oxtail before. Think OH would like it as we dont have beef very often as it's not my fave (and we are always broke) Did get a piece of brisket in the week for the slow cooker. Anyway. How much weight would I need for 2 ? Sorry - I had to ring my elder sister to ask the same when I was cooking steak & kidney pie for 8. It just kind of grows and we have to eat it for a week.
One tail? Whatever that weight might be.
