Yet another delicious easy squash recipe! ;D Had it for my lunch yesterday and definately moreish, also handy that all the ingredients were homegrown! ;)
Makes 6 good sized servings
4lb Squash ( butternut, hubbard or turks turban, rouge vif are good for this)
20 Cloves garlic
Olive oil
water
2 Leeks including tender green parts, finely chopped
40 fl oz/1.25L Vegetable or Chicken stock
S & P
Fresh chives to snip on the top
Preheat oven to Gas 6, 400f, 200c
Peel squash removing seeds, and cut into chunks about 1 inch (2.5cm) thick.
Put into a roasting pan with the whole garlic cloves.
Toss in a couple of tablespoons of oil until well coated and add about 2 fl oz water.
Roast until soft and golden about 50-60 mins, stirring occasionally. If the squash starts to stick/scorch add a bit more water.
Whilst they are roasting heat a heavy frying pan over a medium heat, warm a slosh of olive oil and add the leeks, saute until golden brown, about 15 mins. Set aside.
In a blender combine squash, leeks and the garlic, squeezed out of its skins, with some of the stock, puree until smooth, add remaining stock and bring to a simmer.
Season to taste.
Pour into bowls and garnish with snipped chives.

Tee heee. I love garlic but only dare use one clove as if I eat more it kills me with heartburn and indigestion worse luck ;D
Mind you the garlic if the garlic is roasted first it might lessen it's impact. What do you reckon?
I reakon so Wardy, it always comes out so much sweeter roasted, with less of a garlicky taste if you know what I mean! ;)

We made a variation on this at the weekend... used half a bulb of garlic (now we like garlic, but 20!) also added 1lb of tomatoes (the pumpkin flesh turned out to be white - more like marrow really - so the tomatoes made it turn orange like it should be), 2 or 3 tsp of garum masala and a handful of lentils.
