Hello everyone,
Like most of us, I've a glut of runner beans this year..neighbours have refused to answer their doorbells when I try to doorstep them with yet another Sainsbury's bagful; would lock themselves into their cars as they attempted to vacate the road, etc. etc..
SO... with a bulging freezer (and STILL they come)any novel ways of cooking them??
I've sliced them thinly in the trad. way, cooked them, then tossed them in a covering sauce of (home-made, natch) sauce of olive oil (OK,OK that was bought-in :D, garlic, chilli, thyme, oregano, skinned toms. and salt & served them at room temp..
Any other fave ways, please?? My cookery 'bibles' are strangely silent on this point...thanks, 'Lishka

And if you really get stuck, bring some over! We had an almost total failure with our dwarfs this year.
And, in freezing, the thinner they are cut, the quicker the freezer burn. And why did anyone devise such a labour intensive way of cutting beans, so that you actually need a machine to do it for you? - Tim
I know how you feel Oz - I lost all my broccoli - club root not flutterbys - I wouldn't have minded if it was them though.

I'm cooking a frittata tomorrow of almost-gone-over lettuce & onion - an Italian classic, with some cheese grated on top, but have never heard of a runner bean one - and, after a few days away, I see that they've been quietly but determinedly making their presence felt... ;)'Lishka
I'm sooo jealous, my runners were a disaster this year but have just started to flower again- will I get a 2nd crop?

From my fave middle eastern veggie cook book, you could try: Kharapaki lobi which is Armenian.
Cook beans. Drain. Melt 2oz butter, add 1 thinly sliced onion and ditto green pepper, cook until tender. Add 3 toms blanched peeled and coarsely chopped and fresh basil. Cook further couple mins. Add beans. Stir well. Beat together egg and yogurt with salt and pepper. Stir through into veg mix, heat and serve with chopped parsley. It is for hors doevre or starter. Enjoy!
Alternatively, try an eggah!
Cook beans until tender. Melt butter, add beans and cook a few mins, sprinkle cheddar or haloumi grated cheese over. cover and cook 1 min. Beat some eggs in bowl with salt/pepper. Pour into pan and stir until evently mixed. Cover and cook a few mins over low heat until eggs set. Invert and serve immediately.

Cook beans and drain. Wash (button or your choice) mushrooms, remove stalks and slice v. thin. Peel and finely chop shallot. In bowl mix cream, shallot, lemon juice, season to taste. Add beans and mushrooms, mix and serve as first course with tasty bread and some rough Italian. (Wine that is - behave!)
About 3 more I could do but don't want to be accused of hogging air space.

Instead of the normal red flowered beans, I grew peachey colour ones this year, (called sunrise...sunset...sunkissed....something like that) and was dissapointed earlier in the year as there were only a few flowers and even less beans...however...oh my god....they are taking over now and are smothered in flowers, bees and beans!
I love runners, in a big bowl, steaming hot with plenty of salt and a thingy of butter (strange girl I know....I'm the only person I know who LOVES sprouts!) but my grandads aboslute fave is a runner bean sandwich! Just warm beans piled into fresh, very buttered thick white bread, and plenty of salt and pepper! No accounting for taste huh!

I've just read your recipes, Suze & Emma-Jane..they're all brill! and thank you. You know what...do you think we could ask for a food board for posting recipes? We all seem to have so many different ones gleaned from so many different countries - I'd like to share mine just as much as I'll like doing all these 'different and innovative things' with bloody boring old runner beans.

"Bloody boring"??? Comment made because there's a dearth of recipes in my cookbooks involving runner beans..even Elizabeth David was strangely silent about them. Runner beans, tho...they must be the classic introduction to so many of the Cult of Cultivating Your Own??? They certainly were to me... did you just come by your cookbook because you just did, or have you lived in the countries, I wonder? - Lishka

No, haven't lived in Middle East but did in Turkey for a while. The book is probably out of print but is by Arto der Haroutunian and called vegetarian dishes from middle east. Look out for it in charity shops!

Cook prepared beans and drain well. Skin smoked eel and slice as thinly as poss. Peel and finely chop shallot. Mix together double cream, lemon juice and shallot and season to taste. Divide beans onto plates, top with eel and coat with cream sauce. If you don't have an eel handy I suppose smoked trout would be good (and cheaper!)
Another similar is using those Dutch smoked sausages you get prepacked in supermarkets and instead of cream dressing after tossing beans in melted butter a drizzle of balsamic vinegar.
I could give you some Indian ones as well, like chick pea and bean salad, or with coconut and sesame seeds?

Beans with mustard seeds & red pepper.
Trim and cut beans and put in water. Heat oil when hot put in tsp black mustard seeds, tsp cumin seeds and 2 tsp urad dal (could use red lentils or any other dal). Stir and put in 1-2 whole dried/fresh peppers (or to taste) and cayenne pepper. Stir and put in drained beans and salt. Turn heat down mix well and cover and simmer gently 6-8 mins. Remove cover and turn heat up and stir and saute 3-4 mins until liquid evaporated. Should look very dry. Usually would have fresh cocoanut sprinkled over.
Chick pea & Bean salad
Tinned or cooked chick peas. If tinned heat thru. Place in bowl, add dressing made from oil, vinegar, salt, tsp garam masala, crushed garlic, cayenne pepper. Leave as long as poss, pref at least 2 hours or longer for flavour to permeate.
For green beans: oil, lemon juice, salt, 1/2 tsp garam masala, chopped onion, tsp grated ginger. Wash and cook beans. Drain. Put in bowl, pour dressing over and let them sit 5 mins. Combine two salads and mix well.
