A bit sweet, with quite a course texture.

It depends what sort of pumpkin you use. You can also use squash like butternut which has a creamier flavour.

Try roasting the pumpkin with a little garlic first for a better flavour - sometimes pumpkin (as opposed to squash) can be a bit watery.

You can also add sweet potato - that's what I'm doing today

Hope that helps

You are tempting me Diana, I will consider roasting it first to improve the flavour ....

pumpkin curry ...
pumpkin wine ...
pumpkin pasties ...
pumpkin soup ...

Yes, but I was thinking of things that I have already, or are intending to make ...

I seem to be the only person in our house that eats risotto, I have no idea why ...

It does make a good rissotto I agree  :)  I fried my pumpkin a bit first

Pumpkin goes really well with curry spices or nutmeg I find oh a don't foget a bit of cream stirred in before serving.  I put a few drops of chilli sauce in mine too but I do like my soup spicy  :)

Diana, do you happen to have a pumpkin risotto recipe? OH is turning his nose up a bit at pumpkins hanging around the house, and when I mention that he could cook them - he does practically all the cooking - he mutters on about how the only time he liked pumpkin was in a risotto in a restaurant.  Apparently it also had truffle in, but he's not getting that!

I tend to roast the pumpkin first as some have such hight water content.  The beauty of pumpkin soup is you can tweak the flavours to suit.  Apple goes well with it, so does carrot, a little curry powder or chilli makes it a great winter warmer, and cumin and corriander give it that musky 'omar sherif' hint!
