One of my family's firm favourites:
Cake:
8oz (225g) margarine or butter (or mixture of both)
6oz (170g) oats (you can also use oatmeal)
6oz (170g) plain flour
4oz (110g) caster sugar (can also use granulated)
1oz (25g) cocoa, seived
pinch of salt
Icing:
8oz (225g) icing sugar
1/2 oz (15g) cocoa
3tbsp (45ml) orange juice
Mix all the dry cake ingredients in a bowl.
Melt the margarine/butter in a large saucepan.
Stir in the mixed dry ingredients.
Press the mixture firmly into a square or rectangular baking tray, around 9"x11" tray or smaller. It should be roughly 1/2 inch thick.
Bake 20-25 minutes at 180°C / 350°F / gas mark 4.
Make the icing: sieve icing sugar and cocoa, add the orange juice.
Pour the icing over the cake while still very warm and slice it while still warm. Remove from tin when cold.

I don't do the 'fruit and chocolate' thing - my pet hate - but i will try it without as i like the idea of all the rest.

can you freeze it? not that it would be around long in most households but living alone, I didn't ought to eat it up too quickly!! :(

I've never tried freezing it, but it will probably work fine - just make a small batch and freeze a few pieces, and let it thaw properly on a cooling rack.
The flavour improves with keeping a few days, though never makes it beyond a week in our house! :P
For variety make the icing with lemon juice instead of orange, and add 4oz raisins or sultanas to the main mix.
