Made myself a simple chicken broth last night using what I'd got, eg chicken breast, onion, cubed celeriac root, cubed parsnip (given to my by lotty neighbour), cubed spud, chicken stock and a sprig or two of fresh thyme. Broke spud up a bit when cooked to thicken it a bit. Put some milk in to whiten it a bit (no cream unfortunatley)
It was absolutely gorgeous :) I normally put carrot, peas, mushrooms etc in but it was fine without. Sometimes less is more :)
With those ingredients, how could you fail?
I agree when making soup - less is more. By keeping it simple, the true flavours are retained, adding more ingredients tends to 'muddy' the flavour. I make all my soups this way, and I am always pleased with the result. So there you go, a bloke who can make decent soup ;D ;D ;D

Now looking for more celeriac recipes. My lotty mate had it with a hare the other day. Well, I call him my mate but he didn't save any for me :(
Celeriac mash is nice!
Emma's an ace on celeriac, but my favourite is 'Gratin' - like I've so often said. And roast & in potato mash &..........!! And raw in salads.
But have you got sizeable fruit now??
Lifted my first celeriac, still a bit on the small size, a little bigger than a tennis ball, another month perhaps?
DP, do you chop it and include with the potatoes to boil, then mash, do you add anything like grated cheese to the mash?
Tim, could you post a recipe for the gratin, it sounds nice.
My celeriac are still very small, I save them for those hard winter days when comfort food is needed ...

Celeriac in abundance on lotty - mine and my lotty mates's. He gave me my plants but he put his in about 2 weeks before mine so we're eating his first. They are tennis ball size now but mine are smaller. Mine, though, were planted in undug soil using a bulb planter so I never expected them to do well at all but they're looking promising :)
Wardy, the recipe that I use comes from the Waitrose cards, and tasty is is too, they sugesst serving it with roasted onions and sausages.yum!
1 celeriac about 800g, peeled and cut into small chunks
500g Floury potatoes cut into small chunks
100ml Creme Fraiche (I use the non fat one!)
Boil em both in a pan, simmer until cooked, 15-18 mins. Drain well and mash until smooth.
Stir in creme fraiche, season to taste.
and you can also add 2 crushed tablespoon green peppercorns in brine.
I have also tried it with capers which was good too!
That does sound nice DP, real comfort food.
