Has anyone any ideas what i can do with my spinach before it bolts, i have got loads.... can it be frozen.....??????? :-\

Yes - it freezes. Blanch first then freeze whole or chopped (squeeze out water first). And check out the recipes section for further ideas.

Spinach and pine nut lasagne is to die for and uses shedloads of the green stuff. I'll post a recipe if anyone's interested.

Posted in both :D The trick is plenty of butter and nutmeg with the spinach. Though to be honest I'd probably just eat the spinach and forget about the lasagne! ;D

That recipe is for ravioli, but you can make canneloni even easier, but cutting up supermarket lasagne sheets. Pour tomato-type sauce over the top and bake for half an hour or so. Yum!
I do spinach and ricotta canneloni, but with tom sauce under it and cheese sauce on top.

For snacks try putting cooked spinach (with butter, pepper and nutmeg) in flaky pastry (like big ravioli :D) with cubed feta cheese, and topping it with sesame seeds. Takes about half an hour from scratch if you get shop-bought pastry, and unless you're a flaky pastry genius this is a sight easier!
Made myself hungry now. I want a glut of spinach. :D

I have got some new perpetual spinach coming up, so looking forward to having fresh spinach again. Last years went to seed recently but lasted 10 months, so I can't grumble. :) busy_lizzie
My Indian lotty neighbour has given me some spinach seed which he grows successfully through the winter and it always seems to be nice and green. I've not sown it yet but I think I'll get some in so I have some to eat over the winter :) I like creamed spinach too which is mixed with single cream and nutmeg. Totally gorgeous but a tad fattening maybe. Who cares ;D
