Title: Huckleberry Jam

Does anyone know the recipe for huckleberry jam? or if not jam, what else can I do with them.

not found a jam recipe but cam across this one for huckleberry muffins.

Huckleberry Muffins
Prep Time: approx. 15 Minutes.
Cook Time: approx. 15 Minutes.
Ready in: approx. 30 Minutes.
Makes 15 muffins (15 servings).

3/4 cup butter

1 cup white sugar

1 egg


3/4 cup milk

1 teaspoon vanilla extract

1 3/4 cups sifted all-purpose flour (plain flour)

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup huckleberries

1 tablespoon all-purpose flour(plain flour)


Directions

1 Preheat the oven to 400 degrees F (200 degrees C).
   Grease 15 muffin cups, or line with muffin papers.

2 In a large bowl, cream together the butter and sugar
   until smooth.
Mix in the egg, milk and vanilla until well  blended.
Combine 1 3/4 cups flour, baking powder and salt; stir into the batter until just moistened. Toss huckleberries with remaining flour to coat, then fold them into the batter. Spoon batter into muffin cups, filling at least 2/3 full.

3 Bake for 15 minutes in the preheated oven, or until the
   tops spring back when lightly pressed.

Wild Mountain Huckleberry Preserves

1 lime, coarsely chopped with peel

3-1/2 cups sugar

2-1/2 cups fresh huckleberries, stemmed

Place the lime in a small saucepan and add water to cover. Bring to a boil and cook over medium heat for 15 minutes. Strain the liquid through a fine-mesh strainer into a large, non-corrosive pot, pressing against the pulp with the back of a spoon. Discard the pulp.

Add the sugar and slowly bring the mixture to a boil, stirring frequently to keep the sugar from burning. Raise the heat to medium-high, place a candy thermometer in the syrup, and cook until the syrup registers 235 degrees F (soft-ball stage).

Add the huckleberries. Heat until the mass of berries and syrup is boiling rapidly (adjust the heat as necessary to prevent the mixture from boiling over). Continue cooking uncovered, stirring frequently, until droplets fall off a spoon in sheets (soft-ball stage), about 30 minutes.

Remove from the heat and set aside to cool, stirring occasionally to distribute the fruit. Ladle the cooled fruit mixture into hot, sterilized jars, leaving 1/2-inch headspace. Wipe off the rims and seal the jars with sterilized rings and lids. Process in a hot-water bath for 10 minutes.

Store in a cool, dark place for up to 1 year. Once the jars are opened, they can be stored in the refrigerator for up to 3 months.

Makes about 1-1/2 quarts.

Does that mean you have grown them Titchagger?  I believe I have but am dubious about using them as they look almost like deadly nightshade to me!  Also, even tho they are black, the birds haven't touched them so I am worried that might be poisonous!  Could you describe yours to me please.

Yes I was given them by another allotment holder, but unfortubately I have not seen her over the last couple of weeks to see what I do with them.   But they have, like yours, not been touched by insects or birds and taste awfull.
Anyway, waste not I will find a use for them one way or another and I think jam is the best solution

I too have grown Huckleberries - given by lottie neighbour. Although her bushes grew to

approx 3-4' tall, mine were small ( soil lacking in something maybe ???)

I haven't picked any yet, but having stumbled across these recipes and going to lottie today

with Bizzy_Lizzie! may well try something out ;D

I am tooooo frightened to use mine!  Looks tooo much like deadly nightshade to me!

Picked mine today - not a great harvest - 3/4 lb, but will be able to do something.
