Title: Mash
Post by: Mrs Ava on August 19, 2005, 15:16:50
Still thinking what to do with those courgettes, this is what we had last night with our bangers.  2 spuds, 2 kohl rabi, 2 carrots, 1 courgette.  Peel roots and chop the veg into equalish sized chunks.  Bung the kohl rabi in cold water in a pan and bring to the boil and cook for about 5 mins, then add the rest of the veg.  Once it is all tender, drain very well, then mash adding salt and plenty of black pepper.  You can add butter if you desire.  Dollop into gratin/oven proof dish, scatter with a little grated cheese and put in the over to brown.

Very good actually.  It made a wet mash thanks to the courgies, but 10 mins in the oven soon crisped the top up, and with lovely roasted onion gravy and good bangers, it was very tasty, and quite good calorie wise as I didn't add any butter or milk, so it was just a medley of veg!

Sounds yummy, but im a little confused- my brother used to be a chef and he told me the rule of thumb for boiling veg was- roots should be brought to the boil and leafy veg should be added to boiling water- not sure if it makes much difference though ???

I know, I know, and my grandma was probably spinning in her grave when I had them all in the pan together, but lifes to short to boil all the veggies up individually and then mash them together!

Sounds fab EJ  :)   Speaking of good bangers I bought some yesterday from Somerfield's very limited range and served them up to my guests this morning.  They were the worst I'd ever tasted!  The texture was just pap >:(  It's national sausage week some time in August so will be watching that with interest.  Since starting this biz I've been in pursuit of the best brekky sausage.  It's a hard job but someone has to do it  :)

Wardy we have a local sausage round here called Speldhurst, loved them so much that when we lived overseas and I was visiting, I used to freeze them and take them back with me!!
I see now that Sainsburys are selling them, may just be our area though, but worth looking out for!
I get all mine from our local sausage shop.......helps that daughter is best friends with owners daughter! ;)  They are delish!

My absolute favourite sausages of all time are Clonakilty - Irish brand, I stock up at the duty free in Cork Airport  :)

At the pub where I work part time as a chef we serve all kinds of varieties of sausages sourced from local butchers. However, I often find them too coarse and heavy for me, certainly for breakfast, when I just want flavour without too much bulk. Good luck in your sausage hunting!

Thanks for those suggestions.  Am on the case.  Tried another brand this morning and thumbs down again.  I had some sausages from Morrisonsons the other day for our barby and they were fab.  Bit robust for brekkers though  :)

Wardy I found this link but don't have time to check it out fully.

I was looking for sausages that we used to buy from our local post office before it closed but can't find them.  They were the most wonderful sausage I have ever had and I long for them.  I lived in the Middle East for 5 years with no pork and used to dream about them!
