hi codcatcher (strange name!)
there's a whole thread on growing garlic currently running over on edible plants, but to answer your question, most people grow from indiviual cloves rather than seeds. and most people buy certified virus free cloves (instead of using supermarket ones) to avoid getting the awesome white rot thingy.

Buy in Septembre , plant late september to mid october. Like Sweet peas and winter/jap onions. Harvest in say late June - Late July depending on soil and conditions of the growing year.
