Title: Patti Pan Squash

Can anyone please help with a problem. My wife has always grown these patti pan squash veg's. This year she planted them into domed compost made on the veg plot. With good growing conditions the amount of squash they are producing is amazing! Anyone know of any good recipes to help use up our glut ?

ok, no idea about the patti pan squash, but this is my fav way of using any squash:

Baked Butternut Squash with Spicy Butter Beans
Serves: 4

Instructions
Preheat the oven to 190°C, gas mark 5. Cut two butternut squashes in half lengthways, deseed and place on a baking sheet, cut sides facing up. Brush the surfaces with olive oil and season. Bake for 45 minutes or until tender. Meanwhile, heat 2 tbsp olive oil in a pan, add a chopped clove of garlic, two sliced leeks and a chopped red pepper. Stir well and cook for 3-4 minutes, or until softened. Stir in a 410g can butter beans, drained, and a 310g jar Thai Delight Laksa, plus 75-100ml of cold water. Simmer for 5 minutes, then spoon over the cooked squash and sprinkle with a handful of roughly chopped fresh coriander.

i have used the following variation:

used spring onions instead of leeks, added the red pepper. couldn't find butter beans in cupboard so used a tin of chili beans (in chili sauce), added to the pan including the sauce. left out the thai sauce though. was super delish, and even better with a couple of squares of 'doux de montagne' cheese put into the squash before topping with the sauce. added parsley instead of coriander.

ant, any of the courgette recipes would work well, mine are not doing so well this year, I am hoping for a late glut! ;D

My advice is plant 'em in compost domes on the surface of your plot and angle a flower pot into the root system. We have got yellow and pale green flying saucers everywhere!!!   :D :o ::)

Lucky you! Try these:

Cut them small (2"/5cm), steam (about 10 mins) and serve them whole like spuds with butter, parsley, grind of salt and pepper.

Cut them large, scoop out the middles, stuff with any of your favourite stuffings, and bake about 25 minutes.

I would kill for those delicious little flying saucers, I've never grown them successfully. Will try your method next year! ;D
