We keep making this on a Friday evening so we have something to munch in between digging, weeding and admiring our crops!
Gentry sautè some an onion, garlic, courgette and bacon (or salami or whatever you have lurking in your fridge) in a heavy (preferably cast iron) 8" frying pan. Whilst that's cooking, cook some chard or spinach in a little butter and water. Drain off all the liquid when done. To the onion etc, add some thinish slices of potato that you cunningly cooked beforehand or leftover from the previous day. Fry them a smidgen. Chuck in the chard, some salt, pepper and oregano, parsley or any nice fresh herbs that you have lying around. Break 6 or 7 eggs into a bowl and gently whisk. Add these to the pan along with some parmesan and make sure it goes over everything. Cook over a moderate heat until it starts to set and then pop it into a warm oven until it looks yummy.
You can put in just about any veg, cheese or meat that you have. It always tastes good!

I'm a huge fan off fritatas/omelettes/tortillas - they're very popular with my toddler and i luuuuurve them cold in a buttie the next day (stems from several mispent summers in Spain in my youth ;))

My son seems to like most things - he's especially fond of fruit & if i don't keep a sharp eye on him he'll help himself to apples from the fruit crate which i then find all over the place covered in little teeth marks. For ages i thought we had a particularly clever mouse ;) ;D
