Title: Tayberry jam- needs pectin?
Post by: return of the mac on July 27, 2005, 22:37:00
Do i have to add pectin to the tayberry jam im making tomorrow? (bearing in mind i am too chep and lazy to go and buy some). So is it absolutely necessary or are tayberries sound for pectin (like strawbs)

any recipe i've seen has added pectin.
you could maybe have a mix of tayberries & strawberries to help it to set.

Didn't think strawbs were good for pectin.  ???

However, I would say Tayberry's are fine, to be honest, I have never used pectin, and if in doubt have used some lemon juice or grated a cooking apple into the fruit.
