Have we mentioned that as a good courgette user upper? Made one tonight for supper. Gently fried some of my shallots and garlic in olive oil until soft. Added some chopped mushrooms (supermarket :-[) some of my own carrots, diced, chopped french beans, a whole courgette diced and some chard stem and shredded leaves. Flung in about a cup or so of rissotto rice and stired until it was all coated in oil then added veggie stock, a ladel full at a time. It took about a pint and a half of stock (roughly) and was finished with a swirl of cream. Heaven in a bowl! (And used another courgette up!) ;D
