Courgette and Lemon Fritters

INGREDIENTS
700g Courgettes (1.5 LB) and grated zest of 2 lemons
2 Garlic cloves, peeled and chopped
1 Tablespoon corn-flour
1 Beaten egg
Lemon wedges and watercress, for garnish
(The Relish)
10 Cherry tomatoes, chopped
1 Teaspoon olive oil, squeeze of lemon
Half a red onion, chopped
METHOD
(1) Grate courgettes, place in a colander, sprinkle with teaspoon of salt, (to draw the water out) and leave for 30 minutes.
(2) In a small bowl, mix together the relish ingredients, set aside.
(3) Squeeze out as much water from the courgettes as you can, using your hands, then wrap in a tea-towel and twist the ends.
(4) Mix all the fritter ingredients in a bowl with the courgettes, and season with black pepper.
(5) Heat frying pan with a little oil, and fry tablespoons of the mix, pressing down to form patties.
Cook until golden on both sides.
Serve with the relish, lemon wedges and watercress./ shredded lettuce

Can't wait till my courgettes really start going....there are some tiddlers on at the moment but they seem to be taking their time fattening up this year ???
We have one (huge) plant pumping out around 2 courgettes every couple of days. It's producing them like they're going out of fashion. I'm definitely trying courgette fritters - thanks!
Going to make these to go with toad in the hole tonite. Going to make them now and reheat later in a frying pan. Still have a tray full of courgettes in the fridge and haven't been to the plot now since Monday! :o I fear I will be attacked by giant courgettes when I do get there.

Made them, and added some lemon juice also, and they were sooooooooooo tasty! Definately going to do these again, even if Ava turned his nose up! Honestly, some non-courgette-loving-males!

I am looking after another plot while the chap is away and I've had so many courgettes of my own I've not picked his :o Two weeks worth :o I don't know whether to go and pick em all today and pretend I've eaten them all or put them all in a great pile in his shed with a copy of all the courgette recipes off A4A ;D
they look yummy would make some but i most be the only person that does not have any courgettes, EJ looking at your fritters made my mouth water
They are so nice! Had a couple in a bagel for my lunch! The lemon is so refreshing. Have decided they would make great little crispy ones as finger food with a dip at a nibbly kinda event. ;D
I must make some of those they look delish. I made the sweetcorn fritters from the Country Living magazine this month and they were lovely, kids thought they were great, espcially dipped in home made ketchup. :)

Had these today - gorgeous. Had to cheat as not yet getting enough courgettes and nicked one out of the box scheme box to suplement the lottie one. At least they were both organic and I already know mine are very tasty (black something or other - beauty I think)
