harvested all my rhubarb yesterday, before it's too late.
But what to do with it?
I've cooked it up, with pineapple juice and a grated apple to sweeten. And now most of it is in the freezer for future consumption. I have one batch mixed with cherries to make a rhubarb and cherry sugar-free cake loaf.
But what shall I do with the rest.
Obviously there's crumble, which I can adapt to a no-sugar one. But what else can I do?
And who was it said they did custard without the sugar? can I have the recipe?

This is a great recipe that my rhubarb hating daughter loves:
Sour Cream Rhubarb Squares.
Oven 180/gas4, baking tin 33x23x5 lined with parchment
Melt15g butter & stir into 100g castor sugar, 100g chopped mixed nuts & 1tsp cinammon, set aside.
Cream 100g butter with 250 dark muscovado & 1 egg, stir in 225g pl flour, 1 tsp bicarb & 2x 142 ml cartons soured cream then add 300g chopped (1cm) rhubarb. Pour into tin & sprinkle with sugar & nut topping.
Bake 30 - 35 mins.
You can serve it as a pud (bake in dish if you want) or cool & cut into squares. I freeze this.
This sounds fab - I like the idea of cutting into squares to
put into packed lunches for my two kids

did you try the jelly idea ? hot mushy rhubarb mixed into a sugar free jelly. I like it with a whole can of evaporated milk on the top, but I'm just uncouth ;D I lurve evaporated milk :P
