Title: Sage

My girlfriend bought me a sage plant from our local farm and i wondered if you had any god ideas for it.

I don't really want to just make stuffing for a chicken!

Also, would i just cut the leaf at the bottom for however many i need to use, or is there a 'special' way of doing things?

Broad bean and sage soup  is a nice a foodstuff as you could eat, if you like broad beans and sage that is.
To use sage all we do is pull leaves off as and when. Youngest and smallest leaves are best though.

All I ever make is sage and onion stuffing with mine. And I'm a veggie, so I just have it when I fancy some stuffing (love the stuff). (I wish I could think of a better way of phrasing that, but I can't be bothered to!)

Grilled Goats' cheese on fried (or oile & baked) bread with salad & walnut oil, walnut & sage dressing.

Porc au sauge. Chops marinated in egg, onion, parsley, crumbled sage, Then breadcrumbs & fry.

Pick as you see fit! But kee it 'trim' - don't let it get treelike.

I have a recipe somewhere for leek & sage quiche.
Very yummy - will post it tomorrow as i'm just dashing off to work in ashort while :( ::)

Broad Bean and Sage Soup

1 onion.
1lb of shelled broad beans
1 and a half pints of stock ( veg or chicken)
handful of sage leaves (more or less to taste}
Fry onion till golden.
Add beans and stock and boil until soft.
Add sage about five minutes before the end.
Season to taste.
Liquidise and serve.
Sive if you want a smoother soup, but this does remove a lot of the fibre from the beans.
Mint is just as good as sage.
No doubt the garlic lovers and the dairy eaters would want to add their particular poison to this.

tea.
yes, really. tea. leave leaves to steep, then sweeten with honey. it's my niece's favourite drink :) you can also dry the leaves for winter use either in stuffings, orother receipes, or tea.

sage is good when you have a sore throat. think about it, there are plenty of 'sore throat' sweets that contain sage.

it is nice sauteed in hot olive oil, with garlic, then tossed into pasta.  DP ( You can add a few chopped tomatoes too!)

AWT recipe that I tried recently and was delicious.

Pork with Sage and Cheese

Batter/pound (its late!) a piece of pork medallion or loin to a thin, flat piece.  Season lightly and then place some sage leaves (or chopped up bits - depends how strong you like it) on the pork, then put some cheese on (whatever you like - I've used parmesan once, goats cheese another time, and dolcelatte (sp) - but prefered the parmesan), then put an asparagus spear on (slightly steamed).  Roll the whole thing up and fry gently in butter.  Lovely.

Hope that makes sense - red wine fog!  :P

Butternut Squash and sage pizza

Pizza base and tom sauce as usual.

Top with lightly sauted onions and cubes of bn squash, mozerella cheese and sage. Cook until cheese is melty and everthing is lightly tanned. It's fantastic.

Oops, nearly forgot don't forget the garlic and seasoning!

Doris.  We do the pasta thing too but fry off some chorizo too and add that to the crispy sage.  Lemon rind as well if you're feeling adventurous.

Peel, halve and quarter onions - quantity not important.
place in an oven-proof dish.
add about 1-2 table spoons of chicken stock
1 table spoon olive oil.
A little salt and black pepper
finely chopped fresh sage - appox 1-2 tablespoons.
cover dish with lid or foil
cooked in slow oven gas 4 (sorry don't know electric)
for 1 and half - 2 hours - till onions are soft.

Delicious served with pasta or as a veggie

Beryl that onion recipe sounds sooo tasty - will try it as I'm very partial to onions - even more so when they're my own grown ones  ;)

Cheese and sage sauce - good with anything particularly mashed potatoe, baked leeks or squash/pumpkin:

½ glass white wine
1 tbsp flour
50g/2oz cheddar cheese, grated
1 tbsp fresh sage, shredded
