Chilli chilli Chicken risotto

I went to a restaurant many years ago and they had piri piri risotto, so this is my take on it and have been making it for years  it will feed 4 people

3 chicken breasts chopped into 1 inch chunks
1 onion
2 cloves of garlic
Olive oil
1 red chillies (optional and or you can use the fresh chillies paste which is fab and I tend to use for convenience)
1/2 teaspoon of paprika
Handful of fresh coriander chopped up finely
1 red pepper chopped into strips
6 ripe tomatoes skinned and chopped into quarters
Risotto rice - about half the packet
1 chicken stock cube
about a pint and half of water
a really good grating of parmesan cheese

You will probably need a wok to do this in, firstly fry the onion garlic, chillies and paprika until onion is soft, add the chicken and seal, then add the rice and fry until the rice looks translucent then add the red pepper and tomatoes  and water and stock cubes and half the coriander bubble away stirring every few minutes so that it doesn't stick and once all the liquid has nearly been absorbed add the parmesan and the rest of the coriander and serve, yummy with rocket and spinach salad.

I make a risotto with leek and bacon.

Start with onion then add leeks, fry til soft. Add chopped bacon minus fat. Add arborio rice and the stock, bit at a time. When finished, add in some cheddar or parmesan, and stir in some chopped parsley at the end. a bit more parsley on top to serve. YUM

Will give both of your a go tho, sound good, and I like anything spicy!
