I've always loathed frozen ratatouille, it never seems to taste as good as the constituent parts, but I think qahtan may have convinced me to give it another go. :)

It does save waste and is fine when added to some thing like minestrone soup etc , try it you'll like it.... ;-))))).

tomatoes seeded, skinned and chopped,  salted to taste, brought to the boil, strain and save as much juice as possible. dice the zucchini (courgette) add to tomato juice bring to boil a moment, drain, mix with tomato, adjust seasoning, (salt) cool and freeze.  qahtan

I made ratatouille and bottled it, it tastes quite nice on it's own.
I forgot the recipe amounts, but I put onions, plum tomatoes, courgettes and a clove or two of crushed garlic. I fried the onions and garlic and added the rest.

We've frozen a load of this sort of thing in 1 pint tubs (tescos value 600ml). Useful either left chunky or blended for stew/poast sauce bases and blended for things like chillis, pizza topping etc

I saw an allotment recipe book in the garden xentre a couple of days ago... could tell it was rubbish as it didn't have a section 1/2 the book long dedicated to beans and courgettes :D
