Quince Ice cream

The quince tree is bent double with quince so lots of recipes will be needed.  I already make jelly,jam and the quince paste, membrillo, but am looking for more unusual ideas. The Waitrose magazine have a quince ice cream recipe which sounds delicious - but they make it using the 'meringue method' and they say it only keeps for about a month - but I would like it to keep for Christmas.
Has anyone got an easy foolproof recipe for a fruit ice cream that I can adapt for quince? Or any other quince recipes as well?!

not sure about the ice cream but I have a rx for persian quince stew; spiced quinces; baked honey quinces with mascarpone and biscotti; quince chutney; vanilla poached quince; quince marinated pork ribs; roast pheasant with quince paste

a search engine will provide but if any of the above suit let me know and I'll post the details

ps home made ice cream isn't meant to last (and I don't mean because it gets eaten  ;D) but because the cream or custard base doesn't always keep as well as commercial ones so maybe try making you ice cream anyway

Thanks, Calendula - I think I found most of the recipes on my google search except the quince marinated pork ribs - would love that one.
Not being an ice cream maker I did not know that home made would not last as long as the commercial stuff. I will try and make some anyway and see what happens!

for quince marinated pork ribs

pork ribs - amount depending on how many you are feeding or how hungry
250g quince paste (you already have this so assume you know how to make it)
1/2 cup port or red wine or masala
1 cinnamon stick
juice and grated rind of 1 orange

combine quince paste, cinnamon stick and orange rind in a pan and stir over low heat until the paste melts. Simmer for a few minutes, then pour over the ribs coating as evenly as possible - leave to marinate for a couple of hours

cook the ribs as you would normally do (very good on a BBQ) and serve with rice and/or a salad or whatever you like

with marinades I firmly believe you can add whatever takes your fancy so no fixed rules

Did poached quince yesterday for supper - delicious with greek yogurt. I have soooo many that I managed to persuade a local greengrocer to take some and he will be giving me the wholesale price for them. There are some quince recipes in the latest Waitrose magazine - but there were no quince for sale in my loval branch!

I did a roast pork joint last night with quince, apple, sweet potato, onion & red wine - all chucked in a roasting pan (wine last!)

It was delicious! :)

mouth watering - my kind of meal  :)

I have a new quince and it blossomed its heart out this spring and I was so looking forward to eating them but the blossom didn't set due to 'the weather' - now have to wait until next year  :'(
