Pineapple Recipes needed Please - Urgent

Hi all, please help - I bought 6 pineapples today, at a local auction for £1.00, I;m making some pineapple jam as we speak with 3, but need ideas for the other 3 - they are very ripe, hence the urgency!

If you would like to eat one today, Jamie Olivers bash 2 tablespoons of Granulated sugar and a handful of mint together in a pestle n mortar, then sprinkle over your cut up pineapple is well loved in this household!
The only other recipe that flies into my head when I think Pineapple is upside down cake! ;D Reminds me of my childhood. (Would freeze too)
They do keep well in the fridge which slows down the ripening.

Thanks DP, unfortunately I'm dieting at the moment, so might make and freeze pineapple upside down pud - I remember my Grandma making that! :)

Kathi if you UK Google Pineapple recipes, there are quite a few, including one on another allotment site for pineapple and squash! (sounded interesting)

Sounds like you have enough to make some chutney! they are also nice sprinkled with a little sugar and BBQed

1 medium onion, diced
2 tablespoons ginger, small dice
6 jalapenos, diced
1 tablespoon cumin, toasted and ground
1/2 cup rum
1 pineapple, diced
1/2 cup fresh lime juice
1/2 cup raw sugar
1/4 cup cilantro, chopped
Salt and fresh ground pepper

In saucepan over medium heat, saute onions, ginger, jalapenos, and cumin for 6 minutes. Add rum, cook until almost all is evaporated. Add pineapple, lime juice, and sugar, bring to simmer and remove from heat. Add cilantro, salt and pepper, to taste.

Biscombe - that sounds yummy, I love making chutneys, so will have a go at that - no cilantro but sure I can find substitute

we make, and freeze smoothies, pineapple, mango and orange, pineapple, raspberry and apple juice, very good for the diet and one of your five-a-day  ;D
frozen in cut down 2 litre pop bottles, by the way  :)

Drink 5 more cans-Pineapple tastes good with anything.

Thanks for all the recipes, used all the pineapples now, smoothies,jam,chutney and puree - also pickled 4lbs beetroot and made some grape jelly - now gotta clean the kitchen as pineapple juice everywhere!!!
