Blackcurrant leaf sorbet

Hope I have done this right E.J. Recipe from A year at Ballymaloe cookery school. By Darina Allen

2 lrg handfuls young blackcurrent leaves
1 pint water
8oz gran sugar
juice of 3 lemons
1 egg white( if you dont have an ice-cream maker)

serves 6




Crush the blackcurrent leaves tightly in your hand, then into s/s saucepan with the water and sugar.Stir to dissolve sugar bring to boil slowly. Simmer for 2/3 mins ,set aside to cool completely* Add the lemon juice strain and freeze for 25 mins in an ice-cream maker or sorbetiere ,serve in chilled glasses lined with blackcurrent leaves.

Note: If you do not have said gadgets , simply freeze the sorbet in a dish in the freezer , then whisk until smooth return to freezer
.Whisk again when almost frozen and fold in stiffly beaten egg white  ,freeze.
That should do it.

Blackcurrent leaf Lemonade

Make as leaf sorbet upto the point* then add just over a pint of water still or fizzy.

I am going to give her Honey and Lavender ice cream a go today!
