Seville oranges
« on: December 11, 2008, 17:23:30 »
My mother used to make marmalade from seville oranges. I know that they were only available at a certain time of the year but can't remember when. Unfortunately I can't ask my mum as she has passed on; can anybody help me - when are these available to make marmalade and what kind of shops would sell them?

January. They're only there for a short time. you can get them in the supermarkets although a local greengrocer would be preferable if such places still exist!

Jan-Feb - get in there quick, but only choose the firm fruit. Small is good + more peel to pulp.
If you have a Pressure Coooker:

MARMALADE

4lb SEVILLES
3.5pt WATER
1 LEMON
6lb SUGAR

Wash Fruit & Pressure Cook in water for 15 min.
Cut up & save pips & membrane in muslin bag
Heat Sugar/Water, with bag, till dissolved & then to 220F.

Add Oranges/Lemon & cook fast to set point – 220F. Usually when the mix gets sluggish.

Many small grocers no longer stock them - they are all left to rot because people no longer do their own thing. Sad!

Our farm shop has lots of pomegranites but they are very very small.  The local chestnuts are huge mind you!

We buy ours in Jan- Feb usualy from our local market (ply). We use as many as we need to make the marmalade and freeze the rest, fresh or frozen they make really good marmalade.

Freezing, of course!

You always need a top-up , & then there's Orange ice cream in the Summer.
