Rhubarb and apple Easter pie

Just needed to share this VERY rich but equally delish seasonal recipe

1lb 9oz rhubarb cut into cubes
1lb 9oz Cox's apples peeled cored and sliced
3 1/2 oz soft brown sugar
3 eggs
7oz caster sugar
7oz butter, softened
7oz ground almonds
sliced almonds, to finish (optional)

1. Pre-heat oven to 180c/350F/Gas 4
2. Place rhubarb and apples into a large saucepan with brown sugar
3. Place on a low heat and cook until soft
4. Place eggs and caster sugar in a bowl and beat until fluffy
5. Beat in the butter and ground almonds to form a smooth paste
6. place rhubarb and apples in a baking dish approx. 10in wide and 4in high and spread the almond mixture on top
7. Decorate the top with the sliced almonds and place in oven for about 40 mins until golden brown
9. Serve hot with cream or mascarpone cream (9oz mascarpone with 4 tbsp honey mixed in)
