Just a quick question for you knowledgable people. My butternut squashes are nearly the size of marrows and are still green. Will they ripen if I took them off the plant? Thank you folks.

What variety is it? 'Barbara' stays green. I would leave them on the vines till the foliage has died back in any case.

I have managed in the past to have good results ripening them on the windowsill, but there are still several frost free weeks to come hopefully.

Butternuts are normally brown from early on, so if they are green I also suggest a green variety.  Lunga di Napoli is also green.   They are orange inside.
