Title: Variations of courgette soup

I made courgette, pea and mint soup , just softened an onion in a little olive oil added courgette, stock simmered added peas, then blitzed with mint ,

but what do you do with yours ??

I think we can all find a contribution to the million and one ways of using up courgette, zucchini and marrow type squash.

My best tip is to pick the beggers at their tiniest. Far less problems about waste. Leave them to grow big and you need to feed 15 people with something you should have harvested a good few days earlier when it fed one.

Yum that sounds nice! I was given a (verbal) instruction on courgette / mushrooom soup once which went something like 2 onions, several large courgettes, large quantity of mushrooms, lots of black pepper maybe some garlic but can't remember, fry up then liquidise and add either cream or milk to top up. Always tastes good, coconut milk would probably work too.

Use instead of aubergine to make mossaka....

Courgette soup ..... hmmm ....... just omit courgette ......... lovely ::)
