Title: Storage of Chillies.

I strung my chillies up and hung them in a hot place. they were green but some have gone red and I think they all will eventually. when they are wisened and dried, how do I use them?????

Well depends on what your cooking!
Crush them up and use like chilli powder or soak them and slice in a stiry fry or add whole to pickles.
Usually I grab one and crush it in my fingers and add to whatever I am cooking (and them forget and rub my eyes and have to suspend the cooking process!)

You could also turn your dried peppers into powder which stores well. I have a coffee bean grinder that I use for this. They do look great strung up in the kitchen though.

If you use the coffee grinder approach, or similar, make sure it's as airtight as possible...  :o

I've always put them (some) in a large bottle of olive oil (with a few cloves of garlic) which I use in all kinds of cooking.  I crush the rest by pestle and mortar with a touch of salt / pepper and keep in a jar for adding to sauces etc.  Keeps for ages.  Can also dry whole and rehydrate in hot water for about 10 mins but never tried this method.
