Title: Pickling Onions??

I have grown some onions from seed that I want to pickle, do I need to let them dry out or are they ok to do right away?

ok now just skin em soak them in brine overnight and bung em in jars. spice em up with a few chillies in the jar. i could just eat one.

I've never got the hanf of brine, so I just skin then chuck a load of salt over them overnight.   Try using clear vinegar as well, as I think it keep the colour better, and put a dried chilli in for a bot of bite.  You can as add some whole black pepper corns.

ooohhhdear..... Have I got it wrong. I pickled my first lot this year. Boiled the vinegar and added a large spoonful of sugar for sweet pickled onions 3 weeks ago.
