Title: Beetroot.

Picked my first beetroot this morning, and as one of them is rather large i would like to pickle it, now i know it takes a long time to cook and having googled i find i can microwave it saving a bunch of time, has anyone here done that and how was it ?

I made some last night, never tried microwaving them though.. my basic recipe,

Cut the tops off about 1" from the beet, leave the roots, wash

Boil for 2 hours

Leave to cool

Top, tail and slice

Pack into clean jars

Pour over malt vinegar - going to try white wine vinegar aswell sometime.

I normally leave them for a couple for weeks before eating - but i dont know if this makes any difference..

I love them with mashed spuds and cold ham or pork  :P
