Title: Off with its head (An Aeonium)

My  Aeonium arboreum var atropurpureum 'Schwarzkopf' has gone all floppy !

I'm thinking about chopping its head off and staring again with the stump bit and also the head bit.

When is the best time to chop Aeoniums ?
