Title: pumpkin chutney

 Hi all,  :D
                  Like everybody else here chutney production is in full swing, so I thought you might like the recipe of my  my favourite one.

  2.5 lbs peeled diced pumpkin (approx 1/2 inch cubes)
  1.5 lbs cooking apples (cored peeled & diced)
  2.5 oz grated root ginger
  3 - 4 fresh red chillies chopped finely (remove some seeds if you want)
  2 tbs mustard seeds
  1 litre distilled vinegar
  3/4 lb soft brown sugar
  1 tbs salt

 Put all ingredients except sugar & salt in a preserving pan, mix well, bring to the boil & simmer for up to 30 mins until the pumpkin has softened but still has a little bite to it. Add the sugar & salt stirring until dissolved, simmer until chutney has reduced to the thickness you are looking for. Bottle as usual.
