Title: freezing courgettes

Do you think i could blanche and freeze courgettes for later use in soups etc in winter???? I have so many but am thinking i will miss them in a couple of months time as they are just about finished now... but in the meantime i have a rack FULL of courgettes and patty pans!

Yes, Olive, just blanch for one minute and cool quickly, then freeze, I have loads in my freezer ready for soup, ratatioulle, veggie lasagne etc.  You can also freeze them without blanching if you are using them fairly quickly, there was a thread on here a while ago and lots of people seemed to not be blanching them, hopefully some of them will post on here too.....

It always seems an expensive way to fill a freezer?

I much prefer to reduce them in some way. Like soup, or ready fried for rat etc. But where, later, do you find your peppers & aubs??
