When is a courgette a marrow please? Or when is it not a good idea to use it with the skin on?
-
I always think once it gets above 6 inches or so. I've eaten big courgettes with the skin on, no worries.

most varieties of both can be used as either but many marrow varieties have a tougher skin even if picked when small but it is all down to personal taste and cooking methods

I've used courgettes up to about 10 inches in length, but they seem to be at their sweetest at about 6 inches. My favourite are Jemmer, which are yellow are deliciously sweet when young.
