I have made elderberry wine for the first time.
Upon having a glass, it seems to taste a bit like sherry!
Why??
I was looking to make a drinkable wine which wasn't too heavy.
...not that it will go to waste you understand ;D
Any advice out there would be gratefully received.

OH NO Debs! :o We are enjoying ours, though it is a bit dry this year, nothing a drop of sugar won't put right! ;D
Perhaps wine fly managed to get in somehow and sour the wine? DP

It is possible that the wine has 'madeirised' ie got a bit too much oxygen, and this has resulted in a change in the taste, from the rich fruitiness that you expected. No harm if you enjoy it like that, but it can be frustrating if you don't ! The lesson is to try and keep the wine covered all the time, and make sure there is very little air when in the bottle. The other possibility is as Doris Pinks says, wine fly, although I would have expected it to taste unpleasant rather than like sherry.

A lot will depend on the recipe you use.
If you included Raisins( which i do) it will make a more full boddied port style wine on the other hand using sultanas will lighten it and make a more dry wine
Is it drinkable? if it is tastes OK --Enjoy ;)
Post your recipe ,it may shed more light on the matter.

Will have to dig out recipe - it was one of Doris Pinks ;D
I kept it in a fermenting bin with airlock in kitchen ( very warm south facing)
It tastes full bodied and ever so slightly effervescent.
But as my avatar (?) says...
If at first you don't succeed... :D

strangely the taste has altered and now tastes very nice ( 1st bottle down)
Wonder if it was due to allowing the wine time to breathe?

So glad Debs, was worried you had a duff!
Lovely stuff isn't it, now you just need to try and keep a bottle for 6 months an taste it then..............we only managed this one year and had to give it to a friend of ours so it wasn't easy to reach! ;D ;D

The taste was quite disappointing at first, but when it had time to breathe...
Was also pleasantly surprised at price of bottles - box of 10 was £4

You bought bottles? Have to say I use old wine bottles, and the cider goes in old beer ones.

That's because I'm a novice to wine-making. Tried to remove the labels from
one or two ( ;D) used wine bottles, but gave up and bought some.
