It is absolutely delicious...  It's not my recipe but one from a forum member that I found... Thanks Tony...

Courgette / Zucchini Slice       

Serves 4 as a main dish or 6-8 as a side veg

Courgettes - 350g about 3 cups – grated or blitzed
Grated cheese - 1 cup
1 large onion – about 1 cup – chopped very finely or blitzed
3 rashers of bacon - chopped
1 ½   cup of S.R. flour - or  plain flour and add ½ teaspoon baking powder..
¼  cup of oil
4 medium eggs
dash of S&P

Cut or blitz courgettes and onion, then combine all ingredients and mix well.

Spoon into a greased oven proof shallow dish – fairly large as it will rise and grow in size!!

Place into a pre-heated oven for 40 - 60 minutes at 180°C.

Ready when it is firm to the touch and nicely brown on top.  Like a quiche without the pastry..

Variations… substitute for bacon… chicken, ham, cooked mince etc..

I've made it a couple of times now and it really is tasty..
