Title: Aubergines

From 2 weedy reduced Tesco plants, I've managed to get one decent sized aubergine and 2 small ones (all grown outside)

Any suggestions for exciting things to do with them, apart from moussaka?

I made a Roasted Aubergine Layer Lunch with lots of other veggies now that was tasty.........in the recipe page.

They do a fab aubergine and tomato casserole in Turkey.

Brinjal chutney.  Used to eat it by the spoon as it is so yummy.  Lots of recipes online.  https://recipes.timesofindia.com/recipes/brinjal-chutney/rs52637066.cms

I used to enjoy aubergines but haven't for a few years now.  However, when I did, the classic recipe was Italian style - sliced aubergine, grilled then layered in a gratin dish with a tomato and basil sauce, mozzarella and Parmesan.  Bake till heated thru and the top layer of Parmesan is crusty.   If you slice the aubergine lengthways you can roll it round tomatoes, basil and mozzarella then spear it with a cocktail stick, top with a cheesy sauce or grated Parmesan and bake.

Tagine made with prunes and almonds and substituting aubergine chunks for lamb is also very good.

I had something like that in Aubergine bake (parmagiana) a pub in Cambridge last week. It was delicious. Will have a go.
