Title: Strong Cheese

Can anyone recommend a good strong cheese - like the stuff we oldies used to get as children  - to make nice cheesey cheese sauces?  Even the supermarket strongest seems awful bland nowada

Strongest I know is 2 year old parmesan.  Not the grated stuff, but bought by the wedge.

Collier's cheese, made in Wales is the one we find the strongest. Not cheap but very nice. I buy mine in Tesco's.

We get a strong cheddar from Wimborne farmers market on a Friday Lou,its the kind of thing I enjoy in a ploughmans
would you like me to get you a piece and mail it,...who knows maybe the post might lose it for a few weeks and itll arrive

Another vote for Collier's, it's very good and has a good bit of omph. Not quite so strong but still very good is Dragon Vintage Welsh Cheddar, a bit cheaper too.

For sauces I sometimes use both cheddar and parmesan which I grate from a chunk, mixed together they give a good strong cheesy flavour.

OH..you lot are making me hungry....cauliflower cheese....cheese on toast....fondue.... :drunken_smilie:

Tesco extra mature is quite strong which I use in sauces to cut down the amount of fat  but when making cheese sauces I find that a little extra salt really brings out the flavour of the cheese.

Healthy ?? less fat more salt I give up lols

If it's a cheddar you're after, the big dairies do Taw Valley Tickler or Wyke's Ivy Vintage Cheddar.  They're both good and widely available.

My current favourite is Lincolnshire Poacher http://lincolnshirepoachercheese.com/our-produce/lincolnshire-poacher/ (http://lincolnshirepoachercheese.com/our-produce/lincolnshire-poacher/).  IMO the "ordinary" is tastier than the vintage, which is a little too smooth for my taste.

It's apparently available at Waitrose, but you can also find it at farmers' markets and delis.

Davidstow Cornish Crackler, it's the only one I can find in Sainsburys that isn't suitable for vegetarians - therefore proper cheese!

Bought some coop mature cheddar cheese good flavour good price a bit crumbly but ok for a sauce.  Not so good for a  sandwich.   I like cayenne pepper in my cheese sauce.  Use less cheese, better on the waistline.

I think cheese sauce needs a little bit of mustard to make it properly "cheesy". I have no idea how this works, but it does!

I do mustard as well, alternatively Worcester Sauce.   :wave:

This thread is So Wrong!  We're having brunch later this morning.  Welsh Rarebit, you say?  Mmmmmm.  There's an idea!
