LEMONGRASS CRÈME FRAICHE SAUCE

Lovely Fresh Sauce that I enjoy dipping chips or using as a Dip for Raw Vegetables or smearing on fish.

INGREDIENTS

1/2 lemongrass stalk
3/4 cup crème fraiche (use 0% Yogurt as a low cal alternative)
grated zest and juice of 2 limes
1 inch fresh ginger, peeled and grated
1/2 teaspoon fine sea salt, or to taste


To make the sauce. Very finely chop the lemongrass or grind finely in a spice grinder or by hand in a pestle and mortar. Whisk with all of the other ingredients for the sauce and set aside.

Keep remainder in a covered bowl in the fridge for about 7 days.
