Decided to use up the glut of ridge cucumbers and make some pickle, loads of windfalls in the orchard, all the small onions chopped up, was going well until I had the bright idea of adding beetroot. It turned out with a very earthy taste. Bunged it back in the pan this morning and tipped a bottle of thick lemon flavoured balsamic mixture that Lidl sell very cheap as a sort of dip. What a difference, sweetish but still sharp and a nice afterbite.
